Note: this was actually supposed to be part of series I did a year or two ago but because I didn’t have pictures I never published it. I’m publishing it now anyway because it is seriously the best recipe! Maybe I can add a picture next time I make it!!!

Thank you Melissa Miller for introducing me to this Ah-mazing healthy meal! Since I have been talking about Intentional Health and Wellness this month, I thought I would share a recipe that my family absolutely loved. It was by far the favorite of the month.

To be honest, I am not sure which recipe I actually ended up using for Crockpot Carnitas. But it had orange juice in it, and lots of great spices. And it was easy. I used a big pork shoulder roast and seared the juices in before putting it in the crockpot. Actually, my husband seared it and put the spices on it. We put in orange juice and lime juice, cumin, chili powder, garlic, salt, and an onion. Google carnitas and you will get the idea…

Then I washed some sweet potatoes and wrapped them in tinfoil and baked them in the oven at 400 degrees for an hour or so.

And made this amazing avocado sauce found at food.com!

That avocado sauce is worth the blending. Just the right amount of zing and creaminess mixed together. When the carnitas and sweet potatoes were ready, we put a sweet potato cut in half on a plate and piled the carnitas on top of the sweet potato, and drizzled avocado sauce on the top (and then added more avocado sauce!) My kids weren’t sure about meat on their sweet potatoes and my son doesn’t like avocados so he was a little concerned about the drizzle, but once they tried it, there was no going back. It was voted a weekly ritual for the family. Whole 30 approved deliciousness that is being added to the family cookbook. We ate it so fast I didn’t get a picture, but the next time we make it I will try to get a picture to add.

Yummy Carnitas with Sweet Potatoes and Avocado Sauce!
3 pounds pork shoulder or pork roast of some sort
2 cups chicken broth
2 TBSP minced garlic
2 TBSP onion powder or 1/2 cup chopped onion
2 TBSP cumin
1 TBSP chili powder
2 tsp ground coriander
1/2 tsp black pepper
1/2 tsp salt
Squeeze juice of a lime
1/2 cup of orange juice
Mix all spices into bowl and then rub spices onto the pork roast and sear roast 2 minutes on each side to seal in juice and spices. Put in crockpot with broth and orange juice. Put on low all day until tender and pulls apart.
Wrap sweet potatoes in tinfoil. Baked sweet potatoes for an hour at 375 degrees.
Avocado sauce:
1 avocado
Juice of half a lime
1/2 tsp salt
1 jalapeno, seeded and cut
2 TBSP cilantro
1/2 cup cold water
2 tsp olive oil
1 TBSP chopped onion
Put all in blender and blend til smooth.
Layer pork roast on top of sweet potato and drizzle avocado sauce on top.
